Ahhh we've hit the middle mark...
Wednesdays always make me smile and I think the fact that it marks 2 days until the weekend could be to blame. Also the fact that my husband brought me coffee in bed. Oh wait, that's every morning. AND he set up a space heater by my vanity to make it a little easier to climb out of my warm covers in the mornings. Can you say Prince Charming? Coffee and heat in this cold weather, yes please! Oh and good morning kisses and snuggles, those are an added bonus too. Have I expressed how amazing he is lately? Because he is. He is heaven sent and I am ever so thankful for life's greatest blessing. Since sliced bread coffee :) He totally deserves every ounce of thankfulness that fills my heart and more. Okay, okay enough gushy stuff.

So now on to more randomness...
Since being married I have discovered a complete adoration for cooking. Lately, my goal has been more quick and healthy meals, because well, with S and I both working we just don't have time to always be fancy-shmancy and our aim for this year is to make more of an effort to be healthy!
Here were some of our meals last week.
Our "go to" meal ; Salmon & salad.
Ingredients :
Fresh salmon (2 fillets)
2 tbsp honey (more or less to your liking)
3 tbsp sesame teriyaki sauce
tsp garlic salt
Preheat oven to 425
Mix the honey, teriyaki sauce & garlic salt together
Put the salmon in a ziploc bag and pour mixture on top
Leave in the fridge for 20min to marinate
Remove and place on a baking sheet lined with tin foil
Bake for 20 minutes.
Serve with salad, rice or bread.
Our first Crockpot meal thanks to Skinny taste

Baked Chicken Dijion and Lime, also from Skinnytaste

I'm over the moon that JT is making his come back and need to save my pretty pennies for a concert ticket to witness this amazing-ness. Okay maybe that's a little over dramatic but I am excited! Hello 90s flashback. I can't believe I've just written a paragraph on JT. Wow, really Tara? Moving on.
I'm addicted to yet another season of the Bachelor, how!? I'm overseas and we don't even get it here! I blame it on my iTunes and my mom. Yep, our Tuesday night convos would be a little boring without the Bachelor drama right? Probably not but it's a good excuse.
On an additional note who's your favorite so far? I'm a wee bit disappointed i n "well -rounded" Sean? Is it just me? Then again it IS the Bachelor so what should I expect.

I'm also a huge fan of our latest God-send, grocery home delivery! Say what!? I know...we are just as excited. It's not a lazy thing I promise. It's more of a we-live-in-a-flat-and-can't-carry-loads-of-groceries-across-town kinda thing. So thank you for this invention, whoever you are that cleverly created such a thing. The UK may not have drive-thru's but it does have this!
Book recommendations. Anyone? I'll have two good weeks coming up to read away and I want to make the most of this time and get some good reading in. Fire away...

2. i'm just as guilty as you -- so invested in the Bachelor. my favorite is Ashlee thus far -- what are your thoughts? i find the girls a lot more bland than in years past, but i'm still hooked!

ReplyDeletethose dinners look delish! i get on cooking kicks, where i cook almost every night for several weeks. and then i go several weeks without cooking. we've been eating out too much, i need to get back into it- maybe i'll try some of these recipes!
Grocery delivery? That's amazing!!! And I'm just as excited for the return of JT and the Bachelor! One of my favorite recent reads is The Forgotten Garden by Kate Morton...I love it!!
